I have a very nice co-worker and we are both Shia and interested in each other. My parents refuse to meet him because I am (removed) and he is (removed) and (removed). Islamically, would I be allowed to marry without their permission since they are just rejecting him because he is not (removed)?

Racism has no room in Islam. Try to talk to them and may be get someone such as scholar, their friend or elderly person to speak to them on your behalf. It will be nice for them to be part of the marriage. If after all these, they still refuse because of his ethnicity, then you are allowed to get marry
