I wanted to know if I am starting my roza as per Dubai time and if I'm flying to a place for example Europe where the sunset is 8 to 10 hours after Dubai time of sunset, should I follow the Dubai time to open my fast or wait for sunset which will extend my fast by 8 to 10 hours. If I follow the Dubai time to break my fast it will not be sunset yet outside the aircraft.

You will fast based on the sunset in the arrival city.
If you feel the fast will be difficult then in the traveling day before zohr go out of dubai 22 km eat something and comeback. So u have broken your fast legally.
