My khums date is on October end and I know an organization who need khums sehme imam to operate their noble work. If I pay 800$ now as Sehme Imam, can I deduct it 800$ when I do Khums calculation on Oct end?

Yes you can pay in advance and deduct that amount later but that organisation must have the permission to collect the khums from Your marja.
